The Effect of Repeated Heating (Tyndalization) on the Chemistry and Microbiology of Pempek (Supervised by AGUS SUPRIADI) Tyndalization is a form of multistage sterilization and uses steam with a temperature of 100ºC which is circulated for 30 minutes, this heating is repeated for 3 consecutive days with different temperature treatments. This study aims to determine the effect of repeated heating (tyndalization) in pempek on chemistry and microbial development. This study used Factorial Randomized Group Design (RAK) method with 2 treatment factors, namely the difference in days (A) and repeated heating temperature (B) consisting of 3 treatment levels each with 3 repetitions. The parameters observed were water content analysis, protein content analysis, degree of acidity (pH), water activity (aw). The results of testing the water content after tyndalization for three consecutive days, the water content increased with the highest value found in the third tyndalization, namely 55.281. The results of protein content testing decreased with the lowest value found on the third day, which is 8.14. The results of the TPC (Total Plate Count) test showed that each treatment had a number of microorganisms that tended to decrease with the length of storage with values ranging from 1.38 cfu/mL to 1.09 cfu/mL. The highest TPC value was found in the treatment with a temperature of 105ºC on the first day with a value of 1.38 cfu/mL, while the lowest value was found in the treatment with a temperature of 105ºC on the third day with a value of 1.1 cfu/mL. Penelitian ini bertujuan untuk mengetahui pengaruh pemanasan berulang (tyndalisasi) pada pempek terhadap kimia dan perkembangan mikroba. Penelitian ini menggunakan metode Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) Faktorial dengan 2 faktor perlakuan yaitu perbedaan hari (A) dan suhu pemanasan berulang (B) yang terdiri dari 3 taraf perlakuan masing-masing dengan dilakan 3 kali pengulangan. Parameter yang diamati adalah analisis kadar air, analisis kadar protein, derajat keasaman (pH), aktivitas air (aw). Hasil pengujian kadar air setelah dilakukan tyndalisasi selama tiga hari berturut-turut, kadar air mengalami peningkatan dengan nilai tertinggi terdapat pada tyndalisasi ketiga, yaitu 55,281. Hasil pengujian kadar protein mengalami penurunan dengan nilai terendah terdapat pada hari ketiga, yaitu 8,14. Hasil dari pengujian TPC (Total Plate Count) diketahui bahwa masing-masing perlakuan memiliki jumlah mikroorganisme cenderung menurun dengan lamanya penyimpanan dengan nilai berkisar antara 1,38 cfu/mL sampai 1,09 cfu/mL. Nilai TPC tertinggi terdapat pada perlakuan dengan suhu 105ºC pada hari pertama dengan nilai 1.38 cfu/mL, sedangkan nilai terendah terdapat pada perlakuan dengan suhu 105ºC pada hari ketiga dengan nilai 1.1 cfu/mL.
