Nagari Aie Dingin yang berlokasi di Alahan Panjang, Kabupaten Solok, Sumatera Barat memiliki topografi perbukitan dengan iklim dingin, keadaan ini memberikan kesempatan bagi perkebunan kopi untuk berkembang dengan baik. Potensi hasil kopi Nagari Aie Dingin mendapat pengakuan publik pada Melbourne International Coffee Expo tahun 2016-2019, namun hasil kopi ini baru terdengar namanya di Indonesia sekitar tahun 2019. Hal tersebut disebabkan oleh hasil panen kopi yang masih berupa green bean kebanyakan diekspor ke luar negeri dan di-rebranding oleh tangan kedua. Kurang gencarnya promosi dan tidak masifnya pengolahan pascapanen kopi di Aie Dingin juga menjadi salah satu alasan mengapa hasil kopi mereka terlambat terkenal oleh penikmat kopi lokal. Untuk membantu mengatasi hal ini diperlukan pusat pengolahan kopi yang dapat terintegrasi langsung dengan perkebunan kopi di daerah Aie Dingin. Selain itu, keberadaan tempat rekreasi eduwisata kopi serta kelas pelatihan pengolahan kopi dapat menjadi poin pendukung bagi promosi kopi setempat. Dalam perencanaan dan perancangan pusat pelatihan dan pengolahan kopi ini penulis mengambil pendekatan desain arsitektur neo-vernakular dengan Rumah Gadang Sumatera Barat sebagai acuan karena bangunan membutuhkan pencahayaan dan penghawaan alami disamping dapat beradaptasi dengan kontur lokasi. Penggunaan struktur panggung dengan pondasi mini pile dipilih untuk tetap mempertahankan kontur tapak dan bentuk struktur arsitektur setempat. Material yang digunakan berupa beton pada bagian struktur dan finishing kayu yang menyelimuti dinding dan lantai bangunan. Bangunan dibuat terpisah-pisah dengan klaster berdasarkan fungsi untuk memudahkan navigasi pengunjung sesuai keperluan. Sistem plumbing di kawasan bersumber dari PDAM yang ditampung pada dua water ground tank dengan bantuan dua tangki penampung air hujan untuk tambahan supply air dan hydrant. Listrik kawasan bersumber dari PLN yang dialirkan ke gardu, trafo dan panel pada ruang utilitas, pasokan listrik ini juga dibantu dengan genset. Nagari Aie Dingin is located in Alahan Panjang, Solok Regency, West Sumatera. This place has a hilly topography and cold climate that enables coffee plantations to grow well. Their coffee production has gained public acknowledgement from Melbourne International Coffee Expo In 2016-2019. However, the local recognition towards Aie Dingin’s coffee just started to come in 2019. The reason is Aie Dingin’s farmers exported their green beans overseas for further processing and got rebranded by a second hand. The lack of promotion and an unimposing post harvest processing are also the reason why their coffee was late to get recognition. To help overcome this, a coffee processing center is needed that can be integrated directly with coffee plantations in the Aie Dingin area. Moreover, the existence of a coffee edu-tourism recreation center and a coffee training and processing center could help the local coffee promotion. In the planning and designing of the coffee training dan processing center, the writer used the neo-vernacular design approach. West Sumatera’s Rumah Gadang was the reference as the building needed natural lighting and ventilation besides being adaptive with the area’s contour. Stilt structure mini pile was chosen as the foundation structure to maintain the site structure and local architectural character. The materials were concrete for the structure and woods for the walls and floors’ finishing. The building was separated by a cluster of functions to ease visitor’s navigation. The plumbing system in this area was from PDAM collected with two water ground tanks with the help of two rain storage tanks. This area electricity was from PLN streamed to the power house, transformer and panels in the utility room and genset as an additional source.
