Penelitian ini bertujuan untuk mengetahui pengaruh penambahan karagenan dan plasticizer yang berbeda terhadap karakteristik fisik dan sensoris eco straw purun tikus. Penelitian ini dilakukan dengan menggunakan Rancangan Acak Kelompok (RAK) dengan 3 taraf perlakuan dan 3 kali ulangan sehingga didapatkan 9 kali unit percobaan. Data yang diperoleh dilakukan analisis menggunakan statistik parametrik yaitu analisis sidik ragam sedangkan data sensoris yang diperoleh diolah menggunakan statistik non parametrik yaitu metode kruskal-walis. Adapun perlakuan yang digunakan yaitu F1 = Karagenan 3%, F2 = Karagenan 3%, gliserol 10%, F3 = Karagenan 3%, sorbitol 10%. Adapun parameter yang diamati yaitu : diameter, daya serap air, transmisi uap air, ketebalan pelapis dan analisis mutu hedonik (warna, aroma, rasa dan tekstur). Data hasil penelitian menunjukkan bahwa penambahan karagenan dan plasticizier tidak berbeda nyata terhadap parameter ketebalan pelapis (1,52 mm – 2,22 mm), diameter ( 5,42 mm - 6,62 mm), daya serap air (33,27 % - 44,59 %), warna (3,48 – 4,04), tekstur (1,72 – 2,12), kenampakan (3,24 – 3,80), rasa (3,00 – 3,32).
