ANALISIS PENERAPAN ENAM PRINSIP HIGIENE SANITASI MAKANAN DI INSTALASI GIZI RUMAH SAKIT IBU DAN ANAK (RSIA) PURI ADHYA PARAMITA LAMPUNG TENGAH
Hygiene and sanitation in the administration of food in hospitals are very important to note so that the food consumed does not become a source of disease transmission. This study aims to analyze the six principles of food sanitation hygiene in the Nutrition Installation of the Mother and Child Hospital (RSIA) Puri Adhya Paramita. The research was conducted in May 2022 using a qualitative design with an observational descriptive approach. Data were collected by observation and photovoice as well as interviews with seven informants. Data analysis in this study used the data validity method, namely triangulation of sources and methods. The results of this study indicate that the nutrition installation has implemented the principle of selecting food ingredients by a third party by the food material request form and serving food with a melamine�covered lunch box, so it has been done well according to the guidelines used by the hospital. Concluded, in the application of the principles of food storage, food processing, ready-to-eat food storage, and food transportation, there are still some that are not in accordance with existing regulations. It is hoped that the hospital will seek to have a certificate of sanitation and hygiene as a food provider.
