KARAKTERISTIK GEL STRENGTH, MORFOLOGI DAN TOTAL FENOL PADA EKSTRAK KARAGINAN RUMPUT LAUT KAPPAPHYCUS ALVAREZII DARI PERAIRAN KETAPANG, LAMPUNG SELATAN
One of the potential wealth of Indonesia's oceans is seaweed. K. alvarezii is a type of carrageenan-producing seaweed (caraginophyte). The purpose of this research was to get the best formulation of carrageenan based on the factors of temperature, time and KOH concentration. This research was conducted from December 2022 to March 2023. The sample formulation was determined by the Design Expert 12 software on the Central Composite Design (CCD) menu. The samples were then tested for gel strength, morphology and total phenol. Based on the research results, the best formulation was the KA6 sample with a yield value of 45.4% and a gel strength of 540.65 g/cm2 which met the Food Agriculture Organization (FAO) standard and 1.72 mgGAE/g total phenol. The optimization of the formula is a temperature of 99.99 oC, 60 minutes and a concentration of 2% KOH with a desirability value of 0.960 resulting in a yield value of 42.78%, a gel strength value of 581.68 g/cm2, and a total phenolic value of 3.87 mgGAE/g. Differences in the factors of time, temperature and concentration of KOH have an influence on the value of gel strength, morphological structure and total phenol as evidenced by the various results obtained.
