PENGARUH KONSENTRASI DAN LAMA PERENDAMAN TERHADAP NILAI GEL STRENGTH DAN MORFOLOGI PADA EKSTRAK AGAR RUMPUT LAUT GRACILARIA SP. DARI PERAIRAN KETAPANG, LAMPUNG SELATAN
Ketapang waters, South Lampung is one of the provinces in Indonesia that has great economic opportunities for seaweed. One of the natural products of Ketapang Waters is red seaweed (Rhodophyceae) of the type Gracilaria sp. which can produce agar. Agar is used as a stabilizer, emulsifier, gel maker, and others. The quality of agar can also be influenced by several internal and external factors. This study aims to examine the effect of lime concentration and soaking time on the quality value (yield and gel strength) of the resulting agar and to determine the optimum concentration of lime water and lime soaking time using the RSM (Response Surface Methodology) method with a CCD design ( Central Composite Design). The concentration of lime water used is 0.3-1.2 g/L while the soaking time used is 12-24 hours. The response optimization result solution recommended by the Design-Expert 12 program is at a lime water concentration of 0.682 g/L, soaking time of 20,067 hours produces a yield value of 65,658% and a gel strength value of 87,251 g/cm2 with a desirability value of 0.781.
