PENGARUH VARIASI JUMLAH PLAT ELEKTRODA TERHADAP PEMECAHAN EMULSI SANTAN PADA PEMBUATAN VCO
VCO is an oil obtained from fresh old coconut flesh squeezed with or without the addition of water, without heating, or by heating less than 60°C. The main component of VCO is medium-chain fatty acids, especially lauric acid. Over time, there have been various technologies for making VCO, but pre-existing methods still have weaknesses, namely that the yield produced is still low and the quality of VCO is not good. One alternative method that can be used to minimize these weaknesses in the breakdown of coconut milk emulsion in the manufacture of VCO is the electrolysis method. This electrolysis method can break the bond that exists in coconut milk emulsions with electric current while the process is in progress. This study aims to determine the effect of the number of electrode plates on the breakdown of coconut milk emulsion in the manufacture of VCO by varying the number of electrode plates to 2, 6, and 12 pieces using aluminum electrodes. Furthermore, the resulting VCO will undergo a quantity test in the form of yield calculations and quality tests in the form of water content, free fatty acid levels, and peroxide number levels in accordance with SNI 7381: 2008. The VCO volume data obtained was processed using ANOVA and a further test, namely the BNT test, to determine the significant difference between variations in the number of electrode plates used. Based on the results of the study, the yield of VCO obtained from variations in the number of electrode plates (2, 6, and 12 pieces, respectively) amounted to 31, 35.53, and 51%. In addition, the results of water content and free fatty acid levels obtained from variations in the number of electrode plates (2, 6, and 12 pieces, respectively) amounted to 0.11, 0.12, and 0.16%, and the results of peroxide number levels were obtained ranging from 0 to 1.2 meq/kg. ANOVA test results obtained Ftable 9.552 and Fcalculate 18.967 with a significance value of 0.020. The variation in the number of electrode plates of 12 pieces has the most significant influence on the number of electrode plates on the breakdown of coconut milk emulsions in the manufacture of VCO based on the results of BNT tests that have been carried out and from the amount of yield produced, which is 55%, and the quality of VCO produced, such as water content, free fatty acid content, and peroxide number levels, have met the quality requirements of SNI 7381: 2008.
