Hygiene, sanitation, and personal hygiene are interrelated things in the food processing process. Poor sanitation hygiene can lead to the development of pathogens in food. The purpose of this study is to describe the hygiene and sanitation of food administration and personal hygiene in the nutritional installation of Siti Khadijah Hospital, Palembang City. The research design used is qualitative with an observational approach. Information was obtained through in-depth interviews, observation, and photovoice methods. The determination of informants was based on a side-purposive method with a total sample of 8 informants, consisting of 2 key informants and 6 regular informants. Data analysis was carried out by collecting data, reducing data, presenting data, and drawing conclusions. The results showed that the technical arrangements for food processing places did not meet several components, such as room corners that did not form a cone and inadequate ventilation. In the principle of food sanitation hygiene, storage of raw materials is carried out in a special closed room with the FIFO and FEFO principles; food processing is carried out in a special room separate from other rooms; the process of transporting food is carried out in closed carts; and serving food is carried out as soon as possible after the food is cooked and served. Food handlers get routine health checks once a year and use complete PPE in the form of head coverings, gloves, aprons, and waterproof shoes. The conclusion of this study shows that the application of sanitation hygiene to buildings, food, and food handlers at the nutrition installation of Siti Khadijah Hospital in Palembang has not fully complied with RI Minister of Health No. 7 of 2019.
