HUBUNGAN FAKTOR SANITASI LINGKUNGAN DENGAN KONTAMINASI SALMONELLA SP PADA AYAM POTONG DI PASAR PERUMNAS SAKO KOTA PALEMBANG 2023
The condition of the chicken slaughterhouse, clean water sources, and unsupportive equipment can be a breeding ground for Salmonella sp bacteria. Poor sanitation has the potential to cause Salmonella sp bacterial contamination in chicken meat. The purpose of the study is to analyze the relationship of environmental sanitation factors with Salmonella sp contamination in chicken meat at the Perumnas Sako market in Palembang City. This type of research is analytical descriptive with a Cross-Sectional study design. This study sample amounted to 20 samples with a total sampling technique. Analysis of the data using the Fisher exact test which showed that Salmonella sp contamination in chicken meat at Perumnas Sako Market Palembang City amounted to 16 positive and 4 negative samples of Salmonella sp. The results showed that all variables of clean water facilities (P-value= 0,014; PR = 2; CI = 1-3,999), sewage systems (P-value = 0,032; PR = 2,3; CI = 0,791-6,885), and equipment use (P-value= 0,013; PR = 3,75; CI = 0,684-20,570) related to Salmonella sp contamination. The study concludes that Salmonella sp contamination is caused by poor environmental sanitation, such as clean water facilities, sewage systems, and equipment use. It is recommended that traders always change the water in every process of processing chickens, dispose of the waste of slaughtered chickens regularly, and wash equipment every time it will be used, and the Public Health Officers in Palembang City need to conduct socialization related to market environmental sanitation.
