NUTRITION FACULTY OF PUBLIC HEALTH SRIWIJAYA UNIVERSITY Skripsi, Salsabila, mentoring by Fatmalina Febry, S.KM., M.Si Acceptability of Cookies with Snakehead Fish Flour and Corn Flour Substitutes as Local Food to Support Stunting Toddler Intake in Palembang City ABSTRACT The problem of stunting in Indonesia is complex and multi-factorial, not only individual but influenced by family and community factors. Inadequate intake of energy and nutrients, as well as infectious diseases are factors that greatly contribute to the problem of stunting.Provision of cookies with substitution of snakehead fish meal and corn flour which contain high protein and amino acids is very good for intake to support stunting toddlers. The purpose of this study was to determine the acceptability of stunting toddlers for cookies by substituting snakehead fish flour and corn flour as supporting inputs. This type of research is quantitative research with experimental methods. In this study the experimental method was a completely randomized design (CRD). In this study, the target of the researchers was 25 semi�trained panelists and 25 children panelists. Organoleptic results data that has been collected was processed using a computer with the SPSS program with a test of variance (Anova) then continued with the Duncan test. From the results of the hedonic test on semi-trained panelists and children's panelists, the selected formulation that had the highest in terms of color, aroma, texture, and taste was the F3 formulation. The organoleptic test results for hedonic quality from the color aspect of the formulation the highest was F3, from the aspect of the formulation's aroma the highest was F4, from the aspect of the texture of the formulation the highest was F4, and from the aspect of the taste of the formulation the highest was F3.
