ANALISIS HIGIENE SANITASI PENJAMAH MAKANAN DAN KEBERADAAN BAKTERI ESCHERICHIA COLI PADA PEMPEK DI SEKITAR KAMPUS UNSRI BUKIT KOTA PALEMBANG.
Poor hygiene and sanitation of handlers can contaminate food. Pempek made from fish meat with high protein and water content can be a medium for E. coli bacteria to breed. The purpose of the study was to analyze sanitation hygiene and the presence of Escherechia coli bacteria in pempek around the Unsri Bukit Campus, Palembang City. This research method is descriptive qualitative through an observational study. There were 15 informants selected through purposive sampling and 15 pempek samples were selected based on inclusion criteria. Pempek laboratory results obtained 0 (negative) E.coli in pempek lenjer, eggs, and adaan. The results of 3 handlers who were sick with coughs and colds were still selling, all touchers did not use masks, 1 handler did not cover their heads, 4 handlers did not use aprons, all handlers did not wash their hands and all handlers chatted while touching food. The handlers do not dry the tools with a rag, 4 handlers do not have a storage area for equipment that is far from the source of contamination and 1 table where the equipment has flies. All handlers do not have a hand washing place with running water, 1 open window, 1 window with flies and 2 handlers with open trash cans. The location for selling 2 pempek handlers is adjacent to a busy road, and 1 pempek handler with a bushy yard. Conclusion of poor hygiene and sanitation of food handlers, no E.coli bacteria were found in pempek. Suggestions increase knowledge and awareness about hygiene and improve the quality of facilities and infrastructure.
