DETERMINAN YANG BERHUBUNGAN DENGAN PERILAKU PENERAPAN HIGIENE SANITASI PENJAMAH MAKANAN DI INSTALASI GIZI RSUD PALEMBANG BARI.
Sanitary hygiene is an effort to control risk factors for contamination of food, both from food ingredients, people, places and equipment so that food is safe for consumption. Handling of poor sanitation can cause harmful things such as poisoning. The general purpose of this study was to determine and observe the determinants related to the behavior of implementing hygiene and sanitation of food handlers based on predisposing factors, enabling factors and reinforcing factors in the Nutrition Installation of Palembang Bari Hospital. Quantitative research design with cross sectional design. Processing of predisposing factor data was analyzed bivariately with Fisher’s exact test, data processing of enabling factors and reinforcing factors was described based on Minister of Health of the Republic of Indonesia No. 1096 of 2011 and the Minister of Health of the Republic of Indonesia No. 7 of 2019. The sample is 21 people with total sampling technique. The results showed that there was no significant relationship between predisposing factors (age p value = 0.635, education level p value = 0.623, training history p value = 1,000, length of work p value = 0.063, knowledge p value = 1,000, attitude p value = 0,544) with food handler sanitation hygiene behavior. The results of the observation of the enabling factors stated that the hygiene and sanitation of food administration had met the requirements of 45 of the 50 assessment criteria and for infrastructure facilities had met the assessment score of 92.3%. The results of the observation of reinforcing factors (supervision) from internal and external supervision have met the requirements of 4 out of 5 assessment criteria. In conclusion, the relevant agencies have not conducted regular health checks on food handlers and have not provided hygiene and sanitation training for food handlers.
