EKSTRAKSI ANTOSIANIN KULIT BUAH NAGA MERAH (Hylocereus Polyrhizus) DENGAN MENGGUNAKAN METODE MAE (Microwave-assisted extraction).
This study aims to determine the effect of microwave power and length of time on the physicochemical properties of the natural dye extract of red dragon fruit skin using the Microwave Assisted Extraction (MAE) method, as well as to obtain the right combination of microwave power treatment and length of time. red dragon fruit. This study used a Completely Randomized Factorial Design (RALF) which consisted of two treatment factors and was repeated three times. The first factor is the microwave time (2 minutes, 3 minutes, 4 minutes, 5 minutes and 6 minutes), and the second factor is the microwave power (100 watts and 200 watts). Parameters observed were color intensity, antioxidant activity, pH, and color stability. This study showed that long microwave treatment and microwave power had a significant effect on color intensity, antioxidant activity, and Ph. Increasing microwave power and extraction time can significantly increase the value of redness (a*), antioxidant activity, and pH. Meanwhile, the lightness (L*) and yellowness (b*) values decreased. Extraction time is 6 minutes, and 200 watt microwave power is the best treatment. The results also showed that the anthocyanin compounds were unstable to heat.
