PENGARUH KERTAS TISU TERHADAP KARAKTERISTIK JAMUR TIRAM PUTIH SEGAR YANG DIKEMAS MENGGUNAKAN PLASTIK POLYPROPYLENE PADA SUHU DINGIN
This study aims to determine the effect of tissue paper as a water absorbent material on the characteristics of fresh white oyster mushrooms packaged using polypropylene plastic and stored at cold temperature. This study used a Factorial Complete Randomized Design (FCRD) with two treatment factors, namely tissue paper mass consisting of 3 levels (0.2%, 0.4%, and 0.6%) and storage time consisting of 5 levels (3, 6, 9, 12, and 15 days). The parameters observed consisted of respiration, moisture content, degree of whiteness, weight loss, tissue paper mass, and analysis of sensory characteristics. The results showed that the mass of tissue paper significantly affected the moisture content, weight loss and mass of tissue paper. Storage time significantly affected the respiration rate, moisture content, weight loss and mass of tissue paper while the interaction of the two treatments significantly affected the respiration rate, weight loss and mass of tissue paper. The best treatment in this study was obtained in the treatment of tissue paper mass of 0.6% and storage time of 15 days with a respiration rate of 27.57 mg.CO2/kg.hour, weight loss of 3.02%, tissue paper mass of 135.83% and sensorially fresh. This treatment was able to increase the shelf mass of white oyster mushrooms that had previously been carried out by Mr. Eko’s UMKM from 4 days to 15 days at cold temperatures.
