Robusta coffee leaf ethanol extract has antioxidant activity so it is widely used as an active ingredient in cosmetic preparations, one of which is serum. In a pharmaceutical preparation it is important to carry out a stability test. This study aims to ensure the ability of a product to survive within the specified limits throughout the period of storage and use, the properties and characteristics of which are the same as those of the time they were made. The formula in this study used three gelling agents with the aim that this liquid-textured serum could obtain maximum stability results, as well as to cover the shortcomings of each polymer used because an increase in the number of gelling agents could strengthen the gel structure (gel matrix) so that the gel viscosity increased. From the 15 run formulas, there are several formulas that are unstable when viewed from visual observations, namely at F1, F6, F8 and F12 where in these formulas there is phase separation, changes in color and texture and syneresis occurs. FTIR-ATR analysis with chemometric combinations showed 15 runs of stable serum dosage formula, which did not show any shift or change in functional groups in each preparation made. There are 7 peaks, both at the beginning of the preparation until the stability test has been carried out. Chemometric analysis shows groupings or similarities in each run formula to facilitate the observation of the FTIR-ATR analysis. The combination of chemometrics with FTIR-ATR can make it easier to observe the stability of serum preparations when compared to just looking at the changes visually.
