This research was conducted to determine the prebiotic activity in combination powder drink of lotus seeds and ginger. Lotus seeds are used as a prebiotics, and ginger as a flavor enhancer in powdered drinks. The research was conducted by looking at the effect of the combined powder drink on the growth of L. acidophilus. The combination powder drink formula consist of F1, F2, F3, F4, F5. Hedonic test was conducted to see the most preferred formulation. Then the combined powder drinks with the most preferred formula was tested for quality standard based on SNI 01-4320-1996. L. acidophilus viability test was performed using the total plate count method. And antibacterial test of L. acidophilus metabolites was carried out by the disc diffusion method. The results of the hedonic test showed that formula 1 was the most preferred. Formula 1 powder drink meets the quality standard of SNI 01-4320-1996.
