UJI AKTIVITAS ANTIBAKTERI KOMBINASI MINYAK BIJI WIJEN (SESAMUM INDICUM L.) DAN METABOLIT PROBIOTIK LACTOBACILLUS BULGARICUS TERHADAP BAKTERI BACILLUS CEREUS SECARA IN VITRO
Sesame seed oil and probiotics are functional food products that in this research both component tested to its antibacterial properties. This research conducted to determine the combination of these two functional foods had better antibacterial properties compared to the single use of each component. Antibacterial activity test using disc paper method, the MIC test using liquid microdillution method, and the MBC test using the Total Plate Count (TPC) method. The results of the GC-MS analysis showed that fatty acid compounds with the highest concentration, linoleic acid (36.57%) and oleic acid (27.59%), followed by palmitate acid (10.12%) and stearic acid (4.37%). The concentration of oil used in antibacterial activity test is 40%, 20%, 10%, 5%, 2.5%, 1.25%, and 0.625% for the MIC test and probiotic metabolites used by the concentration of 100%, 50%, 25%, 12 , 5%, 6.25%, and 3.125%.
