Sungsang fish auction becomes one of infrastructure in selling and buying transactions many kinds of fishes, one of them is gray eel-tailed catfish. Gray eel-tailed catfish is one of species in demersal fish group in South Sumatera and can be made into many kinds of processed products to be consumed. Therefore, it is necessary to be known the nutrition content of gray eel-tailed catfish (Plotosus canius) previously. This research is conducted to analyze the protein, fat, and carbohydrate content of P. canius which is obtained from Sungsang fish auction. This research was carried out in June until the end. The samples of P. canius were taken in the Sungsang fish auction, 4th Sungsang Villages, 2nd Banyuasin Districts, Banyuasin Regency, South Sumatera Province. Preparation and proximate content consists of protein, fat, ash, moisture, and carbohydrate contents analyzing of samples was done in the Bioecology Marine Laboratory, Marine Science Major, Mathecmatics and Natural Science Faculty, Sriwijaya University and Agricultural Chemistry Laboratory, Agricultural Technology Major, Agriculture Faculty, Sriwijaya University. Analyzing of protein content used semi-micro kjeldahl method, fat content used soxhlet method, ash content used muffle furnace (dry ashing) method, moisture content used oven (thermogravimetry) method, and carbohydrate used by diffrerence method. The result of this research showed that proximate content of P. canius’ fresh fish meat consists of protein content value 2,28%, fat content value 11,96%, ash content value 2,03%, moisture content value 81,46%, and carbohydrate content value 2,27%.
