Tujuan penelitian adalah untuk mempelajari pengaruh penambahan sorbitol dan asam sitrat terhadap karakteristik kimia, fisik dan sensoris permen jeli tomat. Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakulatas Pertanian, Universitas Sriwijaya Indralaya pada bulan Maret 2011 sampai Juni 2011. Penelitian menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan dan tiga ulangan. Faktor perlakuan yang diamati adalah konsentrasi sorbitol (Ai : 5%, A2 : 10%, A3 : 15%) dan asam sitrat (Bj : 0,2%, B2 : 0,3%). Parameter yang diamati meliputi kadar air, kadar abu, nilai pH, kadar gula total, kadar vitamin C, kadar asam total, tekstur, warna dan analisis sensoris (aroma, tekstur, warna dan rasa). Hasil penelitian menunjukkan bahwa penambahan sorbitol berpengaruh nyata terhadap kadar abu, pH, kadar gula total dan kadar asam total permen jeli tomat. Penambahan asam sitrat berpengaruh nyata terhadap kadar air, kadar abu, pH, kadar gula total, kadar asam total dan tekstur permen jeli tomat. Perlakuan A3B1 (sorbitol 15% dan asam sitrat 0,2%), dengan kadar air 54,61%, kadar abu 0,64%, pH 4,6, kadar gula total 23,27%, vitamin C 9,44%, kadar asam total 0,61%, tekstur 787,53 gf, lightness 52,27%, chroma 36,37%, hue 37,8° , dan uji kesukaan menunjukkan bahwa perlakuan memiliki skor kesukaan untuk aroma 2,84; tekstur 2,8; warna 3,04, dan rasa 3,32.
