One of the nutritional problems faced in Indonesia at this time is CED (ChronicEnergy Deficiency). Chronic energy deficiency (CED) can be caused by increased nutritional needs during pregnancy and an imbalance in nutritional intake (energyand protein) so that the nutrients needed by the body are not sufficient resulting in imperfect physical and mental growth of the body. The prevalence of pregnantwomen suffering from CED is 629 mothers (73.2%) up to all maternal deaths and has a 20 times greater risk of death. The purpose of this research is to create asnack in the form of cookies that are high in protein and calcium for pregnant women who experience CED. Snack cookies with the addition of beef liver flourand red bean flour. This type of research is experimental with a completelyrandomized design (CRD). There are 4 treatments on cookies with substitution of beef liver flour and red bean flour. Cookies produced will be tested for the level ofpreference of 25 semi-trained panelists and chemical analysis (moisture content, ash content, protein, fat, carbohydrates, and calcium). The statistical test of theorganoleptic test used the normality test followed by the Kruskall Wallis test, while the chemical analysis test was not carried out statistical tests because it was onlyselected based on the best treatment. From the hedonic organoleptic test results, the best treatment with the highest score was the F2 formulation (75% wheat flour,10% beef liver flour and 15% red bean flour). Based on the results of the chemical test, the protein content was 10.3%, while the calcium content test results were143.6 mg/100 g.
