HUBUNGAN HIGIENE PENJAMAH DAN SANITASI SARANA PENJAJA DENGAN KONTAMINASI COLIFORM PADA PEMPEK DI SENTRAL PENJUALAN PEMPEK KOTA PALEMBANG
Snack food contaminated with Coliform can interfere with a person's health and become unsafe for consumption. Poor Hand Hygiene and Sanitation of Vendor Facilities can potentially cause Coliform contamination to enter street food. The purpose of the study was to analyze the relationship between the hygiene of the handlers and the sanitation of the hawker facilities with Coliform contamination in pempek in the center of pempek sales in Palembang City. This type of research is descriptive analytic research with a cross-sectional study design. The research sample amounted to 31 samples with purposive sampling technique. Data analysis used the Chi-square test which showed that Coliform contamination in pempek in Pempek sales center in Palembang City amounted to 22 samples with high MPN numbers. Variables related to Coliform contamination in Pempek sales center in Palembang City were the health of the handlers (P-value= 0.021; PR=1.754; CI=1.095-2.810), personal hygiene of the handlers (P-value=0.045; PR=1.662; CI= 1.068-2.585), use of personal protective equipment (P-value=0.015; PR=1.867; CI=1.123-3.103), and food storage (P-value=0.045; PR=1.662; CI=1.068-2.585). The unrelated variables are handler behavior and vector control variables. It can be concluded that Coliform contamination in street food is caused by poor hygiene of the handlers such as the health of the handlers, personal hygiene of the handlers, the use of personal protective equipment and sanitation of vendor facilities such as storage of ready-to-eat food. The results of this study are expected to be the basis for improving the hygiene of handlers and sanitation of hawker facilities for street food.
