ABSTRACT Indonesia is also still facing challenges for vitamin A coverage where almost everything regarding children not receiving vitamin A in accordance with the coverage standards has not been achieved. Indonesia is a country that has a very high yield of vegetables and fruits, one of which is carrots (Daucus carota L.), Carrots have a high content of carotene nutrients when compared to other vegetables, namely 3784 mcg, spinach is 1449 mcg, tomatoes 575 mcg and pumpkin 1569 mcg. Modification of food products can increase vegetable consumption. vegetable consumption is needed as a source of vitamins, minerals and fiber in achieving a healthy. The content of 100 grams of ice cream is a little antioxidant such as vitamin A, where research was conducted to create modified ice cream products high in vitamin A. Completely Randomized (CRD) . The object had done research on ice cream with the addition of carrots (Daucus carota L.) which differs from 0 g, 25 g, 50 g, 75 g carrot. The hedonic test used less than 30 panelists. In data analysis using the Kruskall Wallis test and the Post Hoc further test. while the analysis of vitamin A using descriptive. The results showed that there were differences in preference for indicators of color, aroma, taste and texture in the four samples. the sample with 75 grams of carrots the ice cream sample with the most favorite values. the control sample contained 9,175 RE/100gram vitamin A, while the F4 sample contained 580,408 RE/100gram vitamin A. In this study, it could be said that sample F4 was the most preferred formulation in the preference test and there are differences in vitamin A content in F1 (control) and F4.
