ANALISIS KONDISI SARANA SANITASI DALAM PROSES PEMBUATAN PENTOL BAKSO PADA INDUSTRI RUMAH TANGGA (IRT) X DI KELURAHAN KAYUARA
Food poisoning can be triggered by the contamination of food. Food contamination occurs in addition to the condition of the sanitation facilities for making food, it is also influenced by contamination of the raw materials for making the food. This study aims to analyze the condition of sanitation facilities in the process of making meatball sticks in the X Home Industry (IRT) located in Sekayu City. This research is a type of qualitative research using observational methods and in-depth interviews to get a picture and analyze the condition of the IRT sanitation facilities for making meatball pentol, the number of informants in this study was 11 people, consisting of 1 key informant (industrial owner) and 10 regular informants (4 employees, 4 sellers, and 2 buyers). The results of this study indicate that the condition of sanitation facilities and raw materials in the process of making X's meatball pentol is in accordance with the health standards of Minister of Health Regulation No. 1096 of 2011, starting from selecting industrial locations far from pollutant sources, providing water and handwashing facilities, the kitchen is made separate from other rooms, the selection of raw materials and the process of making meatball pentol. The conclusion of this study is that the industry and sellers of meatball pens have implemented the regulation of the Minister of Health No. 1096 in implementing the habit of washing hands, maintaining kitchen cleanliness, selecting raw materials, manufacturing and distributing meatball pens. However, it is not yet in accordance with health standards regarding the condition of building facilities and production equipment. Suggestions for the industry to improve the condition of IRT building facilities and replace equipment that is no longer suitable for use and routinely clean it. and for sellers in several branches, there are still sellers who do not use gloves, unclean uniforms, and unhygienic distribution vehicles.
