FORMULASI TEPUNG UBI JALAR UNGU (Ipomoea batatas L. poiret) DAN TEPUNG BEKATUL (Oryza sativa L.) PADA PRODUK SEREAL SEBAGAI ALTERNATIF PANGAN TINGGI SERAT DAN ANTIOKSIDAN
Purple sweet potatoes are found in many regions in Indonesia and are also rich in nutrients, especially antioxidants. As well as rice bran, which is rich in fiber but its utilization as a food product is very low. Fiber and antioxidants have an important function for healthy, especially in boosting the immune system. The purposes of this study was to make a formulation of cereal based on purple sweet potato flour and rice bran flour as a food high in fiber and antioxidants, conduct hedonic and descriptive quality test, also analyze crude fiber content and antioxidant activity in selected formulation and control formulation. This study used experimental research using Completely Randomized Design (CRD) with three levels of treatment. Analysis of hedonic and descriptive quality data used descriptive test and one-way ANOVA test with Duncan's follow-up test. The results were found that the level of preference for F0: 73.15%, F1: 53.6%, F2: 72.35%, and F3: 81.6%. The most liked formulation was F3 with a ratio of purple sweet potato flour and rice bran flour 75:25. Analysis of crude fiber content was found at F0 : 7.1% and F3 : 11.5%, antioxidant activity was found at F0 : 12852.00 ppm and F3 : 383406.66 ppm. The conclusion is there a significant differences in each formulation (p6%). Antioxidant activity in F0 and F3 are classified as very weak (>200ppm) so it can’t be said to be high in antioxidants. For the future research should use dietary fiber analysis to determine the total fiber that can be consumed by the body.
