The research objective was to determine the effect of mixer velocity and coconut water addition into coconut milk on characteristics of virgin coconut oil (VCO). It was conducted ffom January to September 2007 at Agricultural Product Chemistry Laboratory of Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University, Subdistrict of Indralaya, District of Ogan Ilir (OI). The study was carried out by using observation and tabulation method that consisted of two treatments and two replications. The treatments were comprised of mixer velocity (lst scale, 2nd scale, and 3rd scale) and coconut water addition (50%, 75% and 100%) into coconut milk. The observed parameters were Chemical characteristics (the virgin coconut oil Standard consisted of moisture content, colour, iod number and free fatty acid) and throughput of VCO. The result showed that mixer velocity and coconut water addition had influence on the moisture content, colour, iod number, ffee faty acid and throughput of VCO. The result of moisture content test showed that the best moisture content value was found on mixer velocity 3rd scale and coconut water addition of 75% (A3B2) with magnitude of 0.1040%. The colour of VCO test showed that the best value was no treatment with magnitude of 99.65%. The test of free faty acid showed that almost all of VCO had failed to fulflll the SNI of Virgin Coconut Oil, because the average value was greater than 0.3%. The best value of free faty acid was found on mixer velocity ls‘ scale and coconut water addition of 75% (A]B2) with magnitude 0.299%. The result of iod number showed that the best value was found on mixer velocity 2nd scale and coconut water addition of 50% (A2B1). The best throughput value was found on mixer velocity 2nd scale and coconut water addition of 100% (A2B3) with magnitude 16.4%.
