Penelitian ini bertujuan untuk mengetahui karakteristik permen jelly lidah buaya (Aloe vera L.) pada berbagai konsentrasi gula pasir dan asam sitrat. Penelitian ini dilakukan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya Indralaya pada bulan Agustus sampai dengan Desember 2009. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktor perlakuan. Dua faktor perlakuan tersebut adalah konsentrasi gula pasir (Al: 10%, A2: 20%, A3: 30%) dan konsentrasi asam sitrat (BI: 0,1%, B2: 0,2%, B3: 0,3%). Parameter yang diamati meliputi kadar air, kadar abu, tekstur, pH, kadar gula total, kadar asam total, warna dan uji organoleptik. Hasil penelitian menunjukkan bahwa permen jelly Lidah Buaya memiliki rerata kadar air antara 18,70% - 22,55 %, kadar abu antara 0,83 % - 0,96%, tekstur antara 61,27 gf-102,20 gf, pH antara 4,19 - 4,54, kadar gula total antara 6,13 %- 8,77 %, asam total antara 0,50 - 1,22, hue antara 85,43°- 87,97°, lightness antara 33,80%.- 40,17% dan chroma antara 5,97% - 10,23%. Penambahan gula pasir berpengaruh nyata terhadap nilai kadar air, tekstur, chroma dan kadar gula total. Perlakuan penambahan asam sitrat berpengaruh nyata terhadap nilai tekstur, pH dan Interaksi asam total. perlakuan penambahan berpengaruh nyata terhadap nilai pH, chroma dan kadar gula total. Uji organoleptik menunjukkan bahwa perlakuan A3B2 (gula pasir 30% dan asam sitrat 0,2%) merupakan perlakuan yang lebih disukai.
