Tujuan penelitian adalah untuk mempelajari pengaruh penambahan gula pasir dan rumput laut sebagai bahan pengisi terhadap karakteristik fisik, kimia dan sensoris fruit leather sirsak (Anona muricata Linn). Penelitian dilaksanakan pada bulan April 2011 sampai dengan Juli 2011 di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Lndralaya. Penelitian menggunakan metode Rancangan Acak Kelompok Faktorial (RAKF) dengan 2 (dua) faktor perlakuan dan setiap kombinasi perlakuan diulang sebanyak 3 (tiga) kali. Faktor A adalah konsentrasi gula pasir dan faktor B adalah penambahan rumput laut. Parameter yang diamati meliputi karakteristik fisik (tekstur dan warna), karakteristik kimia (kadar air, kadar gula total dan kadar asam total), serta uji organoleptik (uji hedonik meliputi aroma, tekstur, warna dan rasa). Hasil penelitian menunjukkan bahwa konsentrasi gula pasir berpengaruh nyata terhadap warna (hue), kadar air dan kadar asam total, sedangkan interaksi keduanya berpengaruh nyata terhadap warna (chroma), kadar air dan kadar asam total. Perlakuan A3B2 (konsentrasi gula pasir 30% dan penambahan rumput laut 1%) merupakan perlakuan terbaik dengan karakteristik fisik (tekstur 168.87 gf, lightness 59,07%, chroma 29.60%, hue 69,80°), kimia (kadar air 21.59%, kadar gula total 14,57%, kadar asam total 0,34%), dan uji hedonik dengan pemberian skor aroma 2,88 (mendekati suka), warna 3,08 (suka), tekstur 2,76 (mendekati suka), dan rasa 3,08 (suka).
