KARAKTERISASI ENZIM KOLAGENASE DARI SALURAN PENCERNAAN IKAN GABUS (CHANNA STRIATA)
This study aims to determine the value of collagenase enzyme activity from the digestive tract of snakehead fish (Channa striata) by partially purifying the collagenase enzyme using ammonium sulfate and characterizing the collagenase enzyme o the effect of temperature. experimental laboratory method with extract testing carried out 3 (times) replicates, using collagenase enzyme activity testing. The data obtained were analyzed descriptively. The results showed that the value of the collagenase enzyme activity of snakehead fish with casein substrate was 1.729 U/ml which was higher than that of snakehead fish skin collagenase was 1.433 U/ml. Snakehead fish intestine supernatant deposited using ammonium sulfate had optimum enzyme activity at 80% ammonium sulfate concentration of 0 U/ml. The optimum environmental conditions collagenase enzyme activity are 40°C.
