This research aims to determine the effect of the starter concentrastion on quality thickness, yield, fiber content and organoleptic test of nata jack bean boil water (Canavalia ensiformis L.). The research method used was an experimental method with a completely randomized design (CRD) consisting of five treatments and four replications. The treatment consisted of 250 ml of boiled water of sword jack beans (Canavalia ensiformis L.) with a concentration of starter 12%, 14%, 16%, 18% dan 20%. Data were analyzed by ANOVA test followed by Honesty Significant Different (HSD), while organoleptic data were analyzed using the Friedman Conover test. The research was conducted for fourteen days and the results showed that the treatment with starter concentration 20% treatment had a very significant effect on thickness and yield nata jack bean boil water (Canavalia ensiformis L.). While the treatment with starter concentration 14% had a very significant effect on fiber content nata jack bean boil water (Canavalia ensiformis L.). the level of consumer preference for aroma and texture nata jack bean boil water (Canavalia ensiformis L.) showed a very significant difference in all treatments. The level of consumer preference for taste showed no significant difference in all treatments. This research information is expected to be an alternative contextual example in biology materials of biotecnology class XII Semester II learning in Basic Competency 3.10 and Basic Competence 4.10. The results of this study will be donated in the form of learning tools (Sylabus, RPP and LKPD). Keyword : Nata, jack bean (Canavalia ensiformis L.), Acetobacter xylinum.
