PENGARUH PROSES DEFATTING TERHADAP KADAR GULA TOTAL DAN AKTIVITAS ANTIOKSIDAN POLISAKARIDA DAUN TUMBUHAN APU-APU (Pistia stratiotes)
This study aimed to determine the total sugar content and antioxidant activity of crude and pure polysaccharide extracts from water lettuce leaves (Pistia stratiotes). In this study, identification of the constituent components of polysaccharides have been done using FT-IR. The research method was carried out experimentally in the laboratory by carrying out crude extraction and purified extraction using the hot air extraction method, which respectively were carried out each 6 times. The data obtained were analyzed descriptively and conducted a different test (Independent Sample t-Test). The test parameters included extract yield, total sugar content test and identification of FT-IR compounds as well as analysis of antioxidant activity.
