This research aimed to determine the effect of the extraction temperature on the water lettuce (Pistia stratiotes) leaf extract on the yield, bioactive compounds and antioxidant activities. This research was carried out experimentally in a laboratory with temperature treatment consisting of 3 levels (temperatures 30 °C, 45 °C and 60 °C) and repeated 3 times. Parameters was measured in this study including extract yield, bioactive compounds (polyphenols, flavonoid and tannin), antioxidant activity test using the DPPH method. The values obtained was described in the form of pictures, tables and graphs, and continued with Duncan's test. The results of the yield of the water lettuce leaf extract with an extraction temperature of 30 °C, was is 9.11%, an extraction temperature of 45 °C was 14.48% and an extraction temperature of 60 °C was15.32%. The total polyphenols content in the water lettuce leaf extract with extraction temperatures of 30 °C, 45 °C and 60 °C respectively was 273.7 mg GAE/g dry sample, 238.4 mg GAE/g dry sample and 212 mg GAE/g dry sample. The total flavonoids content in the water lettuce leaf extract with extraction temperatures of 30 °C, 45 °C and 60 °C respectively was 641.90 mg QE/g dry sample, 512.61 mg QE/g dry sample and 446.03 mg QE/g dry sample. The tannins content of the water lettuce leaf extract with extraction temperatures of 30 °C, 45 °C and 60 °C respectively was 29.11 mg TAE/g dry sample, 20.77 mg TAE/g dry sample and 18 .45 mg TAE/g dry sample. Antioxidant activity using the DPPH method resulted in an IC50 values in the water lettuce leaf extract with extraction temperatures of 30 °C, 45 °C and 60 °C respectively of 227 ppm, 250 ppm and 317 ppm.
