The purpose of this research was: (1) Describe the process of processing cocoa beans from farmers to the mini chokato factory into cocoa powder, fat and chocolate candy, (2) Analyzing the added value obtained from fermenting cocoa beans into processed cocoa products at the Mini Factory. Chokato, (3) Analyzing the right marketing strategy implemented by the Chokato Mini Factory, both internally and externally. This research was carried out at the Chokato Mini Factory, Kapalo Koto Ampangan Village, South Payakumbuh District, Payakumbuh City. The research method used is the case study method. Data collection was carried out from February to April 2022. The data obtained in this study were primary data and secondary data. The results showed that the production process of processing cocoa beans into cocoa powder, cocoa fat and chocolate candy, namely the preparation of raw materials including harvesting, stripping wet cocoa beans, then fermentation, drying, roasting, skin breaking process, pasteurization, fat compression which produces fat products. Cocoa, then powdered, sifted and for the process of making chocolate candy products will enter the ball mill then the final production stage is the packaging of each product. The added value obtained from processing cocoa beans into cocoa powder is Rp 38.389. Furthermore, the added value obtained from processing the beans into cocoa butter is Rp 73.368 and for chocolate candy products, the added value is Rp 56.701. The biggest added value generated from the processing of cocoa beans into processed chocolate products is cocoa butter. The results of the SWOT analysis through the formulation of internal and external factors using the IFAS and EFAS matrices, it is found that the score value for each matrix is 2,71 and the EFAS matrix is 2,40. Based on the results of the IE and EFAS matrix calculations, it can be seen the business position using the IE matrix, namely the business position of the Mini Choakto Factory is in quadrant or cell V. Therefore, the results of the SWOT analysis show that the marketing strategy of processing cocoa beans into chocolate processed products at the Mini Chokato Factory is a maintain and maintain strategy. The best business marketing strategy is market penetration and product development.
