PENGARUH SUDUT KEMIRINGAN MATA PISAU DAN JUMLAH MATA PISAU TERHADAP HASIL IRISAN KERIPIK PISANG PADA MESIN PENGIRIS TIPE VERTIKAL
This study aims to determine the effect of the angle of inclination of the blade and the number of blades on the thickness of sliced banana chips on a vertical type chip slicing machine. The method used in this study was a Factorial Randomized Block Design (RAKF) with two treatment factors, namely the angle of the blade slope. (A) and the number of blades (B). Each factor consists of three levels of treatment. The level of treatment for the angle of inclination of the blade consists of angles of 3ᵒ, 4ᵒ, and 5ᵒ while the level of treatment for the number of blades consists of the number of blades 2, the number of blades 3, and the number of blades 4. Parameters observed in this study are, actual capacity (kg/hour), percentage of crushed slices (%), yield (%), percentage of whole slices (%), slice thickness (mm). The results showed that the angle of inclination of the blade and the number of blades had a significant effect on the slicing of banana chips, with a combination of treatment with a blade angle of 4° and the number of blades 2 producing the highest average yield and slices, respectively, which was 94.11% and 62.28% while the combination of treatment with a blade angle of 5ᵒ and the number of blades 3 resulted in the highest thickness of 1.97 mm and the percentage of half-whole slices and the lowest percentage of crushed slices of 11.35% and 5.15%, respectively.
