PENGARUH ULTRASONIKASI TERHADAP KARAKTERISTIK FISIK DAN KIMIA B UAH MELON ( Cucumis melo L . ) SEGAR POTONG VARIETAS CANTALUPENSIS
The cantalupensis variety of melon is one of fruit commodity produced in Indonesia and contains moderate amounts of sugar, so it is not recommended for those with sugar tolerance disorders. One possible effort is to treat the melon by the method of ultrasonication. The purpose of this study is to determine the impact of ultrasonic wave frequencies and long-exposure to cantalupensis varieties of melon sugar levels. The study uses a complete random design (RALF) with two treatments - the frequency of ultrasonic waves (20 kHz and 40 kHz) and long contact (10, 15, 20 and 25 minutes). The apparent diets in the melon are (lightness (L*), redness (a*), yellowness (b*) and total color pollution, texture, total sugar levels and vitamin C. This study shows that the frequency of ulrasonics waves has a significant impact on lightness and redness value fresh cut melon. Long exposure gives significant impact on yellowness value, redness value and sugar level of total fresh cut melon. A2B4 (40 kHz, 25 minutes) is the best treatment based on the lowest total sugar content, 4.30° Brix with vitamin C 12.11 mg/100g, lightnes 32.40%, yellowness 17,50%, yellowness 81.4, total color difference 6.11 and texture 35.37%.
