PENGARUH MEDIA PENYIMPANAN DAN WAKTU FERMENTASI BEKASAM IKAN NILA (Oreochromis niloticus) TERHADAP KANDUNGAN SENYAWA BIOAKTIF DAN BAKTERI ASAM LAKTAT
This research has purpose to find changes in bioactive compound and lactic acid bacteria with different storage media and fermentation time, to find media and best time in formation bioactive compunds during fermentation of the scars. This research use 3 methods storage container is jar container, vacuum plastick and non vacuum plastick, each sample was fermented for days to 7, 11 and 15. Data result analyzed by describing each parameter. Parameters are total lactic acid bacteria, amino acid, free fatty acids, fatty acid and lovastatin. The results showed that storage time with use of differences packaging can produce total lactic acid bacteria (6,49-6,72 log cfu/ml), bioactive compounds amino acid, free fatty acid, fatty acid and lovastatin (53,48-74,99 ppm).
