Penelitian ini bertujuan untuk mengetahui kualitas bubuk tulang ikan Gabus (Channa striata) perbedaan suhu perebusan dan konsentrasi NaOH. Penelitian ini dilaksanakan pada bulan Februari sampai November 2012 di Laboratorium Teknologi Hasil Perikanan dan Laboratorium Bioproses Jurusan Teknik Kimia Universitas Sriwijaya. Rancangan yang digunakan berupa Rancangan Acak Kelompok (RAK) Faktorial dengan dua faktor perlakuan yang diulang sebanyak dua kali. Faktor perlakuan terdiri dari perbedaan suhu perebusan (60°C, 65 °C dan 70°C) dan konsentrasi NaOH (kontrol 0%, NaOH 2%, NaOH 4%, dan NaOH 6%). Parameter yang diamati meliputi analisa fisik (rendemen, derajat putih, densitas kamba, dan kelarutan) dan analisa kimia (kadar lemak, kadar protein, kadar abu, dan kadar kalsium). Hasil penelitian menunjukkan bahwa perlakuan perbedaan suhu perebusan dan konsentrasi NaOH berpengaruh nyata terhadap kadar protein, kadar lemak, kadar abu, kadar kalsium. Konsentrasi NaOH dapat meningkatkan kadar abu, kadar kalsium, derajat putih dan densitas kamba bubuk tulang ikan gabus dan menurunkan rendemen, kadar lemak dan kadar protein bubuk tulang ikan gabus. Suhu perebusan dapat menurunkan kadar lemak, kadar protein dan rendemen dan meningkatkan kadar abu, kadar kalsium dan densitas kamba bubuk tulang ikan gabus. Bubuk tulang ikan gabus dengan kombinasi perlakuan perbedaan suhu perebusan 70 °C dan konsentrasi NaOH 6% merupakan perlakuan terbaik dengan nilai derjat putih 58,77%, nilai kadar lemak 0,023%, kadar protein 1,44%, kadar abu 87,59% dan kadar kalsium 22,77%.
