ANALISIS MUTU IKAN PATIN (Pangasius pangasius) ASAP DI UNIT PENGOLAHAN TRADISIONAL JALAN MUHAJIRIN KECAMATAN ILIR BARAT 1 PALEMBANG
The objective of this research was to know and to analyze quality level of smoke catfish (Pangasius pangasius) at tradisional processing unit in Muhajirin Ilir Barat I Palembang, so we know that the quality of smoke catfish still good to be consumed by Palembang society. This research was conducted in microbiclogy Laboratory of Mathematics and Sciences Faculty Sriwijaya University, start on June 2007 until September 2007. The research used laboratory experiment. Laboratory analysis is was done through quality examination microbiology and chemically. The examination sample was done two times in a mouth. Each sample was new smoke catfish that has finished fumigation processing. The result of the experiments showed that Total Plate Count (TPC) was 3,1x105 cfu/g, the result showed that the smoke catfish fulfill Standar Nasional Indonesia (SNI) 01-2725-1992 that was total TPC 5x105 cfu/g, water activity (aw) was 0,89 even trough the water countaint was 47,9%, smoke catfish water containt atthis research was agree with SNI 01-2725-1992 for the smoke catfish 35-50%, protein containt 46,1% this protein containt was agree with SNI 01-2725-1992 protein containt in this smoke catfish product was minimun 3%(dw), ash containt was 3,8% that was agree with SNI 01-2725-1992 than 5%(dw). Fat conlaint 1,9% also agree with SNI 01-2725-1992 that less from 3 %(dw).
