SIFAT FISIKO - KIMIA DAN ORGANOLEPTIK BAKSO BELUT SAWAH (Monopterus albus Zuieuw) DAN BELUT RAWA (Synbranchus bengalensis Mc. Clell)
The research was conducted from April 2006 until Agustus 20 06 in Technologi of Fisheries Product Laboratory and Chemistry of Agriculture Product Laboratory Department of Plant Pathologi Sriwijaya Univcrsity. The aim of the research was to determine the characteristic of Physics-Chemical and Organoleptic of rice field eel (Monopterus albus Zuieuw) fish ball and swamp eel (,Synbranchus bengalensis Mc. Clell) The research used Factorial Randomized Block Design with two faetors and three replications for each treatment. The kind of flsh used were rice field eel (BI) and swamp eel (B2), and the concentration of tapioca : 25 %, 20 %, 15 % and 10 %. The parameters were strieness, colour (lightness, chroma, and hue), water content, mineral content, protein content, fat content, and hedonic test. The result showed that kind of eel, concentration of tapioca and interaction had significant effects on water content, mineral content, protein content, fat content, carbohydrate content, lightness value, chroma value, and hue value of fish b; 11 but hadn’t significant effect on strieness. Most panelist preferred the fish ball that swamp eel with 10% tapioca for the taste and elasticity whereas the fish ball that made from swamp eel with 25% tapioca for the colour and appearance.
