PENAMBAHAN CMC, DEKSTRIN DAN GUM ARABIK PADA PROSES PEMBUATAN GULA AREN BLOK
The objective of this research was to produce cube-shaped palm sugar with the addition of CMC, dextrin and gum Arabic. The experiment was arranged in a Factorial Randomized Block Design, which consisted of two treatments and three replications for each treatment. The first treatment was the type of binding agent and the second treatment was the concentration of binding agent. The parameters were water content, ash content, percentage of insoluble matter in water, reducing sugar content, dissolving rate, colour measurement (Lightness, Chroma and Hue), as well as the sensory evaluation of the cube-shaped palm sugar using hedonic and duo-trio tests. The result showed that the types of binding agent significantly affected the water content, ash content, percentage of insoluble matter in water, reducing sugar content and dissolving rate of the cube-shaped palm sugar. The concentration of binding agent significantly affected the water content, ash content, percentage of insoluble matter in water, reducing sugar content and dissolving rate of the cubeshaped palm sugar. Interaction of the two factors influenced the percentage of insoluble matter in water, reducing sugar content and dissolving rate of the cubeshaped palm sugar. The result of the hedonic test showed that most panelists preferred the colour, aroma and taste of cube-shaped palm sugar with the addition of dextrin 0.2% (A2B2). Most panelists agreed that the cube-shaped palm sugar was relatively similar to the control. The best treatment to produce the cube-shaped palm sugar was the addition of dextrin 0.2%. Its characteristics were 0.18% percentage of insoluble matter in water, 5.7% reducing sugar content, dissolving rate of 127.33 seconds (100°C), 160.33 seconds (70°C), 212.67 seconds (28°C) and 294.67 seconds (5°C).
