The objective of the study was to investigate the characteristics of spray-dried pineappie powder from pineapple’s flesh, shell, and core with the addition of Arabic gum at periods of storage. The experiment was conducted by the Factorial Block Randomized Design with three types of raw material (flesh, shell and core, and the whole part of pineappie), three levels of Arabic gum’s concentration (7,5 %, 10 %, and 12,5 %), and three different storage times (0 day, 30 days, and 60 days). There The parameters were total soluble solids, vitamin C, moisture content, pH, colour (Lightness, Yellowness, Chroma, and Hue), dissolving rate, and the stability of the suspension. The results showed that combination of pineapple’s flesh, shell, and core, with the addition of Arabic gum at 7,5%, 10%, and 12,5% of concentration which had been processed by spray drying had significant effect on total soluble solid, vitamin C, moisture content, pH, colour, and dissolving rate during the storage. The low moisture content under 1 % and the stability of suspension were kept stable 30 days and 60 days of storage. Storage at 30 days and 60 days had caused the lost ot vitamin C at 7,61 % until 15,29 % compared to the 0 day. The used of pineapple’s shell produced pineappie powder which had 16,31 % until 28,38 % of vitamin C higher than the powder made by the flesh. The Yellowness of the powder are three replications were used. On made by the shell was 7,31 % until 44,25 % higher than the powder made by the flesh.
