PENINGKATAN UMUR SIMPAN KERUPUK IKAN PATIN DENGAN BEBERAPA JENIS KEMASAN
The objective of this research was to determine shelf life of patin fish crackers wrapped with four different packaging materials, namely metalized, polypropylene, polyethyelene, and nylon by using Accelerated Shelf Life Testing (ASLT) method. This experiment was done by storing produet in several levels of temperatures (including 35, 45 and 55°C) and relative humidity of 90% for 35 days. Each sample was analyzed at once a week based sensory (flavour and erispiness) and Chemical (free fatty acid and water content) parameters. Those parameters would be used to measure shelf life of the produet. The result revealed that shelf life of patin fish chips paekaged with metalized, polypropylene, polyethylene, and nylon was 121.3844 days, 37,7647 days, 29.2613 days and 40.8987 days, respectively. Metalized prevented increasing free fatty acid and water content in produet better than other packaging materials.
