Tujuan penelitian adalah untuk mengetahui sifat fisik dan kimia pati ganyong (Canna edulis K.) menggunakan hidrolisis asam sitrat Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial dengan dua faktor perlakuan dan diulang sebanyak tiga kali. Faktor pertama adalah pH (2,6; 2,5; dan 2,4) dan kedua adalah waktu hidrolisis (6, 12, dan 18 jam). Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian, Teknologi Pertanian, Fakulatas Pertanian, Universitas Sriwijaya Inderalaya pada bulan November 2011 sampai dengan Agustus 2012. Parameter yang diamati adalah analisa fisik (warna), karakteristik kimia (kadar air, kadar abu, kadar total pati, kadar pati resisten, dan kadar serat total), dan rendemen pati. Hasil penelitian ini menunjukkan bahwa faktor pH dan lama hidrolisis serta interaksi antara kedua faktor perlakuan berpengaruh nyata terhadap warna a, b, kadar abu, kadar pati, kadar pati resisten, dan kadar serat pangan total. Perlakuan P3L3 (pH 2,4 dan lama hidrolisis 18 jam) merupakan perlakuan terbaik dengan karakteristik sebagai berikut: lightness 70,77%, warna a 5,77%, dan warna b 14,07%, kadar air 3,41%, kadar abu 6,30%, kadar total pati 17,00%, kadar pati resisten 30.61%, serat pangan total 29,23%, dan rendemen pati 78,33%.
