PEMANFAATAN EKSTRAK DAUN MANGROVE Avicennia alba SEBAGAI PENGAWET ALAMI IKAN TENGGIRI DARI KAWASAN MUARA SUNGAI MUSI KABUPATEN BANYUASIN
The Utilization of mangrove A. alba can be used as an alternative natural preservative for Mackerel. Mangrove A. alba contains potential bioactive compounds, such as antibacterial and antifungal that can be utilized as a natural preservative for Mackerel. The phytochemical test needs to determine the content of chemical compounds in mangrove A. alba leaf. Mackerel has a high source of protein and vitamins. Mackerel fish preservation is needed to maintain the quality of Mackerel fish as a food source. Therefore, it is necessary to have a scientific study that aims at analyzing the effectiveness of Mangrove A. alba leaf extract as a natural preservative for Mackerel. This research was conducted on March 14-29, 2021. Determination of the mackerel freshness level was carried out by an organoleptic test. These results showed that Mangrove A. alba leaf extract could be used as a natural preservative for Mackerel within 4 days based on the scoring and hedonic tests.
