ANALISIS SUBTITUSI TEPUNG AMPAS TAHU DAN KACANG TANAH (ARACHIS HYPOGAEA L) PADA PEMBUATAN PIE SUSU TINGGI PROTEIN
Abstrack Stunting is a condition of stunted children with a z-score of height for age less than -2 standard deviations (SD) based on growth standards according to WHO. The direct factors that cause stunting are food intake and infectious diseases. The food consumed by children is not only filling but must pay attention to the adequacy of the nutrients needed. Protein is a nutrient that is associated with stunting, a lack of protein in the long term will cause stunting. Protein, apart from being a building block, also plays a role in body regulation and the formation of new DNA. Tofu pulp contains protein which provides an opportunity to be used as an additive in food processing. Peanuts contain vegetable protein nutrients that are beneficial for the body's needs and health. The purpose of this study was to substitute tofu and peanut flour in milk pie, analyze sensory parameters, and analyze the protein content of the pie. This research is an experimental study with a completely randomized design (CRD) and uses the Kruskall Wallis test to analyze the hedonic test data. This study had four formulations, namely, F0 (0% tofu dreg with 10gr peanut flour), F1 (40% tofu dregs flour, 10gr peanut flour), F2 (60% tofu dregs flour, 10gr peanut flour), and F3 (80% tofu dregs flour, 10gr peanut flour). The results showed that F3 was the chosen formulation that was most favored by the panelists. The water content is 29.32%, ash content is 1.71%, fat content is 24.90%, protein content is 12.14%, carbohydrates are 31.93% and total energy is 400.38 kcal. Based on the results of the study, consumption of 17gr of tofu and peanut flour substituted pie milk or the equivalent of one pieces can meet the protein needs of children aged 1-3 years as much as 5% in a day.
