Penelitian ini bertujuan untuk mengetahui pengaruh penambahan rumput laut terhadap karakteristik fisik, kimia dan sensoris mellorine ubi jalar kuning. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris, Jurusan Teknologi Pertanian, Universitas Sriwijaya, Indralaya dari bulan Juni sampai Desember 2013. Penelitian menggunakan metode Rancangan Acak Lengkap (RAL) Non Faktorial dengan 1 (satu) faktor perlakuan yaitu penambahan rumput laut (Euchema cottoni) terdiri dari 5 taraf perlakuan, sehingga diperoleh 5 perlakuan (0 %, 3 %, 5 %, 7 %, 9 %) dan setiap perlakuan diulang sebanyak 3 (tiga) kali. Parameter yang diamati meliputi karakteristik fisik (viskositas, lama meleleh dan sineresis), karakteristik kimia (kadar air, kadar abu dan serat kasar), serta organoleptik (meliputi rasa, tekstur, aroma dan kenampakan). Hasil penelitian menunjukkan bahwa penambahan rumput laut berpengaruh nyata terhadap viskositas, kecepatan leleh dan kadar air. Perlakuan Ai (penambahan 3% rumput laut) merupakan perlakuan terbaik dengan viskositas 433,333 dPoise, kecepatan leleh 51,977 menit, kadar air 51,360%, kadar abu 0,717%, serat kasar 4,15% dan organoleptik dengan kategori suka (penampakan 2,92, rasa 2,92, tekstur 2,76, dan aroma 2,72).
