Penelitian bertujuan untuk mengetahui pengaruh kemasan plastik dan aerasi terhadap mutu tapai segar ubi kayu (Manihot utilissima). Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakulatas Pertanian, Universitas Sriwijaya Indralaya pada bulan September 2012 sampai dengan November 2012. Penelitian menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan dan tiga ulangan. Faktor perlakuan yang diamati adalah jenis plastik (perlakuan A: plastik polipropilen, plastik polietilen, plastik metallized) dan jumlah lubang (perlakuan B : 2, 4 dan 6 lubang). Parameter yang diamati dalam penelitian meliputi karakteristik fisik (tekstur dan warna), karakteristik kimia (kadar air, kadar abu, gula reduksi, asam, alkohol), total mikrobia, dan analisa sensoris (uji hedonik) terhadap aroma, tekstur, warna dan rasa. Perlakuan terbaik berdasarkan karakteristik fisik dan kimia adalah A1B3 (plastik polipropilen 6 lubang), yang diikuti oleh karakteristik kimia (54.11% kadar air, 2.155 % kadar abu, 0.04 % total asam, 22.26 % gula reduksi dan 0.12 % kadar alkohol), 9.57 g/CFU total mikrobia, karakteristik fisik (192.47 gf tekstur and 68.77% lightness, 4.23 % chroma, 80.80° hue) dan karakteristik sensoris (2.80 % aroma, 2.16 % rasa, 2.76 % tekstur dan 2.72 % warna).
