POTENSI PENGGUNAAN FTIR (FOURIRER TRANSFORM INFRARED ) DALAM PENDUGAAN SIFAT FISIK DAN KIMIA CUKO PEMPEK BERBASIS JERUK KUNCI (CITRUS MICROCARPA)
The objective of this study was to identify, discriminate and authenticate the physical and chemical properties of cuko pempek based on kunci citrus. The statistical design used was a factorial randomized block design with 2 treatment factors, namely the type of sugar and the type of acid. The first step of the research was to take the wave spectrum data using the FTIR (Fourier Transform Infrared). FTIR spectrum data is processed using the help of chemometric methods, including principal component analysis, discriminant analysis and regression analysis. The principal component analysis model gives good results with a value of 92.2% for the total variance of the two main components. For the discriminant analysis model, the result of the variance value of the discriminant function is 57.2. In addition, the regression analysis model gives quite diverse results with correlation values for all parameters (viscosity, lightness, color *a, color *b, total acid, pH and total dissolved solids) of each (0.417, 0.330, 0.567, 0.454, 0.187, 0.524, 0.288). Thus, it can be concluded that the effect of the concentration of sugar and acid on cuko pempek based on kunci citrus has a significant difference on the physical and chemical properties.
