Indonesia is a coffee commodity producing country that has high economic value. Coffee plants have a variety of health benefits, one of which is antioxidants. Robusta coffee type has the strongest antioxidant activity because it contains the most polyphenols compounds. However, some compounds such as polyphenols are unstable to environmental influences and physicochemical changes, so research needs to be done on preparation and characterization as well as submicrobial stability tests of chitosan-sodium alginate particles carriers of coffee bean ethanol extract (Coffea canephora. L). This study aims to improve the stability of active substances contained in polymers with the influence of variations in CaCl2 concentrations and to determine the influence of pH concentrations on the stability of submicropartic particles. Preparation of submicropartal coffee bean extract particles using ionic gelasi method with chitosan polymer and sodium alginate as well as calcium chloride (CaCl2) as crosslinker with variations of 20, 40, and 100 μL. The best particle submicrobial formula obtained percent encapsulation efficiency of (95.422%±0.048)% i.e. formula 1 equivalent with a variation in CaCl2 concentration of 20 μL. The characterization results in the best particle submicrobial, PDI, and zeta potential formulas of 335.87 nm, 0.385, and +33.96 mV, respectively. The results of stability tests on the preparation of submicropartic particles in a heating cooling cycle with variations in pH dapar showed a change in pH and decreased levels in all three variations of dapar namely 30,634%, 7,550%, and 15,360%. Antioxidant activity tests show that the best formula of particle submicro before stability tests and after stability tests has moderate antioxidant activity with IC50 of 108,38 μg/mL and 214,88 μg/mL.
