UJI STABILITAS CAMPURAN PIGMEN ROSELLA, MANGGIS DAN SECANG SERTA KAJIAN KINETIKA REAKSI PERUBAHANNYA
Studies have been conducted to determine the stability of combination of pigment derived from natural dyes Rosella (Hibiscus sabdariffa L.), the skin of the Mangosteen fruit (Garcinia mangostcma. L) and Secang wood (Caesalpenia Sappan L.). Propose of this study to determine the stability of the pigment combination of natural dyes storage time, addition of oxiditor, temperature and duration of heating. Kinetic pigment change reaction were analysis to get order of reaction, the reaction rate constant and activation energy of the reaction. Test the stability that natural dye combination showed that the storage time, addition of oxiditor, temperature and duration of heating, effect the stability of natural pigments. From kinetics analysis showed the changes of reaction order was 1.8 with reaction rate constants in storage time and addition of oxidator were 0.0075 gram"08 mL08 day-1 and 0.4175 gram*08 mL08 day'1 respectively. Activation energy of pigment change have value 23.66164 kJ mol’1. Addition of oxidator can accelerate the change of the combination pigment compare with no oxidator.
