PEMANFAATAN TEPUNG KACANG MERAH (Phaseolus vulgaris L) DALAM COOKIES SEBAGAI SNACK ALTERNATIF BAGI PENDERITA DIABETES MELLITUS
Currently diabetes mellitus is a big problem that continues to grow. People with diabetes mellitus who consume adequate fiber can help control the patient's blood glucose levels. Kidney beans are a good source of fiber. Cookies are a type of biscuit made from soft dough, high fat content, relatively crunchy when broken and the pieces are solid. Cookies generally use flour as raw material. Red bean flour can be used as a substitute for wheat flour in making cookies, as well as making cookies with low carbohydrates, low fat, and high fiber so that it can help reduce glucose response so that it can be consumed by people with diabetes mellitus. The type of this research is an experimental study with a completely randomized design (CRD). In this research, hedonic test and hedonic quality test were conducted using 25 semi-panelists. Data analysis was performed using the Kruskall Wallis test. From the results of the F2 formulation (60% red bean flour) was the most preferred formulation with a brown color, slightly strong aroma, slightly bitter, and slightly soft texture, water content of 4.99%; ash content 1.7%; fat 4.3%; 12.3% protein; carbohydrates 52.8%; 5.98% fiber. Suggestions from this study are that there is a need to disseminate information on how to make cookies with red bean flour substitution so that they are safe for consumption by people with diabetes mellitus.
